Mangoes with Sticky Rice
Wash rice well in running water, then soak in cold water overnight. Strain rice in colander, and place in a steamer, cover and cook for 45 minutes. Remove and allow to cool.

Skim top of coconut milk and remopve 100 ml of cream. Keep aside to finish dish. Dissolve sugar in remaning coconut milk over as low a heat as possible. When cool add to cooled rice.

Peel required number of mangoes, one for each person. Slice each horizontally to the seed and arrange neatly on plate. Heap a small mound of rice next to sliced mango.
