Christmas Cake
Mix fruit, nuts, marmalade, brandy. Cream butter, sugar till soft & light, beat in treacle. Beat in eggs 1 at a time. Add vanilla. Sift in flour with spices. Beat in zests. Mix in fruit. Bake in 20x20cm tin at 160C for 1.5 hrs. Reduce to 150C for 30-60mins. Turn off oven. Open door and leave in oven 20 mins. Remove from oven, cool completely before turning out.
