Cabbage Stir-Fried with Red Pepper Paste
Wash the cabbage leaves. Stacking several of them together, cut them crosswise into long, fine, 1/8-inch wide shreds. Seed the red bell pepper and chop it coarsely. Peel the shallots and garlic and chop them coarsely. Combine the pepper, shallots, garlic, shrimp paste, ground red pepper and 3 tablespoons water in an electric blender. Blend until a coarse paste results - it should not be too smooth. Set a wok over a high heat. When it is hot, put in the oil. Once the oil has heated, put in the spice paste. Stir and fry for about 5 minutes or until the oil separates and the mixture has a dark red appearance. Add the cabbage and salt and stir for 30 seconds. Cover tightly, turn the heat to medium-low and cook for 8-10 minutes fr until the cabbage is just done.
